Lobster Rolls are one of our favourite recipes year round! Whether you can get fresh lobster or need to use canned lobster (there is some good canned lobster out there) this recipe makes a great lunch.
- 8 ounces lobster meat, torn into bite size pieces
- 3 tablespoons mayonnaise
- 1 tablespoon butter, room temperature
- 1 medium onion, sliced thin
- 2 hot dog buns
- ½ head butter lettuce, thinly sliced
Combine lobster meat and mayonnaise in the medium bowl. Season to taste with salt and pepper.
Butter along outside surfaces of hot dog buns.
Heat medium skillet over high heat. Place buns, one buttered side down, in skillet. Cook until browned slightly, about 2 minutes per side.
Open buns, fill with lettuce, then lobster mixture and serve immediately.
